Christmas coffee cake recipe

Around Christmas time, two of my favorite foods become available in abundance in nearby grocery stores:  oranges and fresh cranberries. So in honor of the coming holiday and my love of cranberries and citrus I thought I would share my all time favorite easy coffee cake recipe using fresh oranges and cranberries.

Coffee Cake Ingredients:

  • 3/4 C butter, softened
  • 1 C sugar
  • 3 large eggs
  • 1 C milkuncooked coffee cake
  • 1 Tbsp orange liqueur
  • 3 C all-purpose flour
  • 1 1/2 C quick oats
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 C fresh cranberries
  • zest of 1 orange
  • zest of 1 lemon

Streusel Topping Ingredients:

  • 1/2 C light brown sugar
  • 1/2 C quick oats
  • 2 Tbsp butter, softened

Preheat oven to 350F.  Grease two 9×5 inch loaf pans.

In a large bowl, whip together the butter and sugar.  Beat the eggs, milk and liqueur into the butter mixture until combined.

Into a medium bowl, sift together the flour, baking powder, baking soda, and salt.  Stir in the quick oats.  Slowly add the flour and oats mixture to the wet ingredients, stirring until combined.

Fold in the cranberries and citrus zest.  Divide the batter in half, and pour each half into one of the prepared loaf pans, evening out the top of each.

In a small bowl, thoroughly combine the brown sugar, butter, and oats.  Sprinkle the streusel mixture evenly on top of the cake batter.

Bake 45-55 minutes, or until a toothpick inserted into the center of each loaf comes out clean.  Remove from the oven and let cool completely before serving.
