In my quest for a low sugar, frugal, low maintenance breakfast food I have been making my own cereal for a few months now. My primary problem with store bought cereal is sugar content, even the boring or healthy cereals can have a surprising amount of sugar in them. This recipe is originally a conglomeration of several different recipes, and is very flexible so feel free to scale or substitute ingredients to fit your pantry. It will likely work with whatever breakfasty foods you have on hand.
Makes about 6 Servings
- 4 Cups Quick Oats
- 1/4 up sliced almonds
- 1 cup flaked coconut
- 1/2 cup sunflower seeds (unsalted)
- 3 tbsp maple syrup
- 3 tbsp dark brown sugar
- 1/4 cup vegetable oil
- 2 tbsp hot water
- 1/2 tsp salt
- 1/2 cup raisins
- Preheat oven to 250 degrees, and lightly grease a cookie sheet with cooking spray
- Toss together oats, almonds, coconut, and sunflower seeds in a large bowl
- In a separate bowl whisk the maple syrup, brown sugar, oil, water and salt
- Pour the liquid over the dry mixture and mix until thoroughly coated then spread out on the greased cookie sheet
- Bake for 1 hour 15 minutes stirring occasionally until evenly roasted
- Mix in raisins and cool. Store in an air tight container at room temperature.
